Marigold Tea Syrup

15 g dried marigold flower petals or marigold tea

200 g turbinado sugar

200 ml filtered water

Preheat your Sous Vide bath or the oven to 140F.  In a sous vide bag, combine 15 grams of Marigold tea leaves, 200 grams of sugar and 200 ml of filtered water.  Seal, pressing out as much air as possible and place in the preheated sous vide bath or a casserole dish and top with water before placing in the oven.  Allow to steep for 30 minutes.  Carefully remove the sous vide bag from the warm bath and swoosh to stir the remaining sugar granules into the syrup.  Allow to cool and strain into a syrup bottle.  Store in the refrigerator for extended storage.

  • Marigold Tea Syrup

Marigold Tea Syrup is gently floral, a bit grassy and pleasantly sweet.  Doing a cold infusion allows for all of the delicate flavor to shine through without the brewed tea bitterness.

    To make Marigold Tea Syrup:

  • Salt/Saline

Salt/Saline is a great flavor booster.  It can balance sweetness and bitterness, smoothing out a cocktail.  It can also enhance citrus flavor and acidity without the need for more acid.

A pinch of salt can be added to the cocktail, but for consistency, saline is easy to make and allows more control.

    To Make It:

2 oz (60mL) Distilled or Purified Water

1 Tbsp (15g) Fine Sea Salt

Combine in a jar and shake vigorously.  Once salt is dissolved, pour into a dropper bottle.

Coco

Pixar's Coco is as much an exhibition of visual art as it is an animated film, transforming the traditions of Día de los Muertos into a radiant gallery of color, texture, and memory. The story follows young Miguel, an aspiring musician who crosses into the Land of the Dead, where he uncovers the complicated history of his family and the true meaning of legacy. Rather than treating remembrance as a static monument, the film imagines it as a living artwork, sustained through photographs, songs, and the rituals that connect generations. Its intricate architecture, skeletal figures, and handcrafted aesthetic draw deeply from Mexican artistic traditions while presenting them with remarkable technical sophistication. In the end, Coco succeeds not only as a moving narrative but also as a celebration of the enduring power of art to preserve identity long after a life has ended.
